Origin: Josey’s Vineyard, Naramata Bench, Okanagan Valley
Hand harvested at 18 brix and 14g/L total acidity. Foot stomped and left overnight. Destemmed and very gently basket pressed into stainless steel. Spontaneously fermented for 45 days at a temperature of 10 degrees celsius to lock in aromatics. Racked into neutral puncheon for 3 months and bottled early, to keep all the youthful, nostalgic energy in the wine.
