Syrah and Cabernet Franc from our Sage Brush Vineyard, currently in year two of organic transition, were destemmed for a whole berry wild ferment, spending 6 days on the skins before being pressed off into neutral oak barrels. After 8 months in barrels, the wine was transferred into a concrete egg for another 5 months. Bottled unfined and unfiltered.
