From Mirror Lake Vineyard on the Golden Mile Bench. Sustainably farmed on sand and alluvial glacial deposits. The lack of late afternoon sun on the west side of the valley allows the fruit to retain freshness and acidity, on top of warm ripening days throughout the growing season. Hand harvested on September 1st. The Sauvignon Blanc and Muscat were whole bunch direct pressed together. A small portion was foot stomped and left to sit overnight and then added back to the rest of the juice. The juice was left to settle in an open vessel overnight to pick up some oxygen. The next day the juice was racked into stainless steel where it co-fermented slowly with ambient yeasts. The wine was racked with full solids into two neutral puncheons and one 1 year old puncheon. After natural malolactic, the wine sat on lees for 6 months before being racked a second time prior to bottling unfined and unfiltered.
