Varietals: 75% Shiro & Red Heart Plums, 10% Viognier, 15% Riesling
Origin: Cawston, Similkameen Valley / Osoyoos, Okanagan Valley

This wine consists of 75% certified organic Shiro and Red Heart Plums grown with unbelievable care by the family of Twisted Hills Craft Cider in Cawston, BC. The plums were direct pressed right into neutral oak, where the juice went through a natural primary fermentation. The wine was aged alone under head space for three months before topping with Viognier, and being left to age for 10 months in neutral barrel. Before bottling, a small amount of botrytis affected Riesling was added to the blend to round everything out. Bottled unfined and unfiltered.
