In collaboration with our friends from Creek & Gully Cider, this cider-wine hybrid uses our Sage Brush Chardonnay along with Golden Delicious apples from Creek & Gully’s 100 year old organic trees in their Naramata orchard.
Co-pressed and co-fermented for 21 days in stainless steel. Wild co-fermentation. Hand bottled at 1.5 brix where primary fermentation finished in bottle to create a lightly sparkling result. Disgorged in January 2020.
